
This recipe is a summer classic I'm sure you'll enjoy.
Preheat oven to 325°
4 cups fresh blackberries, washed and drained
1 tsp. lemon juice
¼ cup cold water
2 Tbsp. corn starch
1 cup sugar
In medium sauce pan, combine all ingredients and bring to a boil, stirring to prevent sticking. As the temperature comes up, this will thicken. Pour into a small 8 x 10 baking dish. Top with crust. Bake 30 minutes at 325 degrees.
Crust:
1 cup plain flour
½ cup sugar
1 tsp. baking powder
6 Tbsp. cold butter
¼ cup boiling water
Mix flour, sugar and baking powder together in a small bowl. Cut cold butter into mixture with a folk until blended. Add boiling water and blend just until absorbed. Pat out to ¼ inch thickness and transfer to top of cobbler. Dot with pieces of butter and sprinkle lightly with sugar.
