
Summer at Canebrake is beautiful and we all find ourselves running from one activity to the next, too busy to cook. This month's recipe is ideal for this time of year. It's light. It's cool. It's delicious. And it's amazingly easy to prepare.
Ingredients
2 cups medium diced watermelon
1 Tbsp. diced red onion
1 Tbsp. Olive oil
1 tsp. rice wine vinegar
Fresh Spinach or Chopped Romaine
Combine watermelon and red onion and toss with oil and vinegar.
Serve over the greens of your choice and enjoy!
