September 2008 Recipe from Chef Ron

September means back to school. It also means gatherings with family and friends as we move into Fall. If you want to impress your guests without spending all your time in the kitchen, this month's recipe is for you.

Ron's Favorite Banana Pudding
3 Quart Casserole, 12-15 Servings
Ron's Banana Pudding

Ingredients
2 cups sugar
8 Tbs. cornstarch
3 1/2 cups milk
8 eggs, separated
1/2 cup heavy cream
4 oz. softened butter
2 tsp. vanilla
6 bananas
13 oz. vanilla wafers
8 Tbs. sugar

Combine sugar, cornstarch, milk and egg yolks. Whisk to mix, cook on medium high heat to boiling point constantly stirring with whisk. Remove from heat, add butter, vanilla and cream.

Place wafers in bottom of dish, slice bananas on top of wafers and cover with cooked pudding.

Beat egg whites to soft peak. Add 8 Tbs. sugar a little at a time. Spread over pudding. Bake in 325° oven 10-12 minutes.

OPTION 1: Omit egg white meringue and top with whipped cream or cool whip.

OPTION 2: If tired of bananas, substitute 2 cups drained pineapple or 2 cups sliced strawberries instead.
