
It doesn't have to be complicated or expensive to be completely delicious, as proven by this month's recipe.

Ingredients
6 oz. sliced mushrooms
1/4 cup chopped onion
6 Tbsp. butter
1 1/2 cups diced ham
18 eggs, beaten and lightly scrambled
3 1/4 Tbsp. flour
3 cups milk
1 1/2 cups grated cheddar cheese
Dash of salt and white pepper
Sauté mushrooms and onions in 3 Tbsp. butter for 3 – 5 minutes until tender. Set aside.
Add diced ham and scrambled eggs to mushroom and onion mixture
Melt the remaining 3 Tbsp. butter in sauce pan. Add flour and cook for 3 minutes. Add milk and bring to a boil, stirring to prevent sticking. Add cheese, salt and pepper. Add to other ingredients. Pour into 3 quart casserole dish. Top with buttered bread crumbs. Bake at 325 degrees for approximately 45 minutes.
This dish is a great breakfast item that can be made the day before and cooked the next day.
